I'll start by saying that this place hosted me for four months, and it was incredibly humane. It's a workplace where people work very hard, but where human warmth was always present. When I didn't understand something, they explained it to me; when I felt uncomfortable, they asked if everything was alright; when I asked for help, they were there. All levels of the organization worked together seamlessly; there were disagreements among the staff, because we're all human beings working together in a limited space, and coexistence sometimes involves arguments. But communication was always open, and THAT is precisely what makes a place livable.
On the other hand, I want to point out what it means to work in a large-scale kitchen; I think this is true of the Food Service industry worldwide…
The rebounding vibrations shattering everything,
The heavy metal music trying to restore harmony (the bass and drums anchoring everything to the ground),
Our spirits being corrupted by the noise of heavy machinery,
The extreme heat of the stoves and ovens,
The extreme cold of the freezers,
It's very difficult to prevent energy from being drained.

Voy a partir explicitando que este lugar me alojó por 4 meses, de una forma humanamente impecable. Es un espacio laboral donde se trabaja muy duro pero donde la calidez humana estuvo presente en todo momento. Cuando no entendía me explicaban, cuando me sentía incómoda me preguntaban si todo estaba bien, cuando pedía ayuda estaban. Todas las jerarquías trabajando a la par; peleas entre trabajadores hubo pues porque somos todos humanos trabajando juntos en un espacio limitado, y la convivencia a veces implica discusiones. La comunicación siempre estuvo habilitada y exactamente ESO es lo que hace a un espacio habitable.
Por otro lado, quiero señalar lo que implica trabajar en una cocina a gran escala, creo que es así el Food Service de todo el mundo mundial…
El rebote de las vibraciones rompiendo todo,
La música metalera tratando de volver la armonía (los bajos y las baterías anclándolo todo a suelo)
Nuestros espíritus siendo corrompidos por los ruidos de las máquinas pesadas,
El calor extremo de las cocinas y hornos,
El frio extremo de los freezer,
la energía es muy difícil que no se drene.
